What is ‘Gluten Free’ and how does that affect me a as a Baker supplying Food outlets and party cakes?
Gluten Free means a diet does not contain the protein gluten. Gluten is found in Wheat, Barley and Rye. As a Baker this presents somewhat of a problem as ‘to bake cakes’ generally includes the use of Flour which comes from all 3 of the grains.
So having sat my Food Allergen Awareness course and passed the test, I have had to relook at the way I store my foods in order to ensure there is no cross contamination. Some people choose a Gluten free diet as a lifestyle choice as there are health benefits associated with this choice. Others are having a Gluten Free diet because their health depends on it.
Whatever the reason, Gluten Free labelled foods should be just that. No chance of the sneaky gluten finding its way into the delicious food that you are about to devour…
During the Food Allergen Awareness course I learnt about storage of my ingredients, the cleaning of the equipment used but also working methods when both Gluten inclusive and free foods are being made.
By doing all the above, I can be sure that any foods that I produce have been researched, stored and produced according to the guide lines set out to keep Gluten Free customers Gluten Free.
Every item of food produce in my kitchen for sale will be accompanied by an Allergen Sheet which sets out the details of the ingredients and allergens plus shelf life and storage instructions.
